Sheet Pan Garlic Lime Salmon INGREDIENTS 3 small or 2 large bell peppers, cut into thin strips* 1 small sweet onion, thinly sliced  4 salmon fillets (roughly 6 ounces each but doesn’t need to be exact) 1/2 cup of lime juice 2 tablespoons of water 3 tablespoons of olive oil 2 cloves of garlic, finely minced 1/2 teaspoon of red chili flakes 1 teaspoon of cumin 1 1/2 teaspoons of fine sea salt 1 1/2 tablespoons of honey 1/4 cup of finely chopped cilantro for serving: lime wedges and additional chopped cilantro INSTRUCTIONS Pre-heat oven to 400 degrees F and spray a large baking tray with cooking oil. Taco Pasta Recipe Ingredients 1 lb ground beef 2 c. salsa 15 oz tomato sauce 1 1/2 c. water 2 c. uncooked elbow macaroni 15.5 oz canned corn 1/2 c. sharp cheddar cheese shredded Instructions Brown hamburger in a large skillet over medium-high heat for 5-7 minutes. Drain grease off. Add salsa, tomato sauce and water to hamburger in skillet. Heat to boiling. Add macaroni and corn, reduce heat, cover and simmer for 20 minutes or until macaroni is tender. Stir occasionally. When macaroni is cooked sprinkle with cheese, replace cover and let stand until cheese is melted. Notes What kind of beef is best for pasta? I prefer ground beef for this Taco Pasta because it cooks fast and is easy to eat with the pasta. Breakfast Quesadillas Ingredients 6 slices bacon 6 large eggs salt and freshly ground black pepper , to taste 8 ounces cheddar cheese , grated or sliced thin 8 large flour tortillas For serving: salsa, sour cream and guacamole Instructions Heat a large skillet over medium heat.  Add the bacon slices and cook, turning once, until crisp and brown (or to your preference).  Remove to a paper towel-lined plate. Air Fryer Chicken Parmesan Recipe Ingredients 2 - 8 oz chicken breasts ¼ c. shredded Parmesan not grated Parmesan 1 c. Italian style bread crumbs 2 eggs whisked ½ c. marinara sauce ½ c. mozzarella cheese Instructions Set temperature on Air Fryer to 360 degrees F. Preheat 3 minutes. Cut chicken breasts in half, lengthwise and trim. Pound the chicken breasts into thinner pieces that are the same thickness. In a medium bowl mix together the breadcrumbs and parmesan cheese. In another bowl whisk the eggs together. Dip each piece of chicken in egg and then dredge in the breadcrumb mixture. Repeat with remaining pieces of chicken. Place chicken breasts in single layer inside of air fryer basket. If you are using a smaller air fryer you will need to cook in batches. EGG DROP SOUP RECIPE Quick and easy egg drop soup recipe, homemade with simple ingredients in one pot over stovetop in 20 minutes. A comforting soup better than Chinese restaurants!  INGREDIENTS 4 cups Chicken broth Low sodium 1 tbsp Soy sauce 1/2-1 tsp Ginger powder 1/2 tsp Garlic powder Salt To taste Pepper To taste 2 tbsp Cornstarch Dissolved in 2 tbsp water 2 Eggs Large, Beaten 4-5 tbsp Green onions Roughly chopped 1/2 tsp Sesame oil Optional INSTRUCTIONS In a large nonstick pot, add broth, soy sauce, ginger, garlic, salt, pepper and bring to a boil over medium-high heat. Add dissolved cornstarch slurry and mix. Lower the heat to medium.  Add the beaten eggs slowly and gently stir to make ribbons of cooked egg.  Add green onions, sesame oil (optional) and mix.  Turn off heat and serve immediately.  RECIPE NOTES Read all my tips above.
