CHEDDAR BBQ CHICKEN FOIL PACKET MEAL
INGREDIENTS
- 16 ounces Chicken Breast, boneless, skinless, cubed
- 4 ounces Cheddar Cheese, shredded
- 1 Red Bell Pepper, large dice
- 1 Green Bell Pepper, large dice
- 1/2 Red Onion, thinly sliced
- 2 ears Corn, cut into 1/2 inch slices
- 1/3 cup BBQ sauce
INSTRUCTIONS
OVEN INSTRUCTIONS:
- Preheat oven to 400 degrees F.
- In a bowl toss cubed chicken breast and 1/2 of the BBQ together.
- Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
- Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
- Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.
- Place foil packets on a baking sheet and bake for 20-25 minutes or until chicken is cooked through.
- Open foil packets and sprinkle with cheese letting it melt before serving.
GRILLING INSTRUCTIONS:
- Heat grill.
- In a bowl toss cubed chicken breast and 1/2 of the BBQ together.
- Cut 4 sheets of aluminum foil large enough to wrap around the chicken and add-ins.
- Place 4 ounces of the BBQ cubed chicken breast on each sheet of foil.
- Divide the vegetables between each foil packet and fold up the foil sealing the ingredients tightly inside.
- Place foil packets on the grill and cook for 20-25 minutes or until chicken is cooked through.
- Open foil packets and sprinkle with cheese letting it melt before serving.
NOTES
Note: If you are concerned about cooking your food in aluminum place a piece of parchment paper on your foil, then place the food on the parchment paper. Now when you fold up your foil packet the parchment paper will make a barrier between the aluminum and your food but the aluminum on the outside will make it safe to cook over an open flame. Note: This is not required it is just an option.
